With this pizza we want to emphasize how cows are majestic animals where every part is exceptional in its own way. In this pizza where we use the dough as a canvas, we use braise beef shank, the saltiness of the goat feta cheese helps emphasize the entire dish with a touch of tannin beef jus reduction. The last touch of ricotta cheese made in house, helps complete the entire recipe and bring this pizza into an entire new level.
Ingredients: Bocconcini, Feta goat cheese, Beef shank, demi glace (beef), Ricotta cheese (optional)
All our grains are organic, stoneground and from Ontario.
Note: Sourdough it is NOT gluten-free. However, as a result of using stoneground whole grains, the residual concentration of gluten in our 24-hour fermented sourdough, is smaller (20 parts per million) than in other crusts because the sourdough feeds of gluten, during the break down process.
