A letter to Wong

Devoted to express culture, season, experiences and stories of people through food that now has no frontiers. 

This an inspiration from an  artist called Mathew Wong. Blue view was an exposition held here at the AGO.  When our pizzaiolo, when to see it for the first time, he did not imagined the impact it will created on him. Therefore, he wanted, on one way or another to pay tribute to him with a delicious and FUN combination of flavors and colors inspired by the artist paintings.

Ingredients: 

Deep blue Base: Back garlic, celeriac, chicken fat and pea tea flower just for coloring.

Orange paint: Gouda cheese, non salted butter, carrot to intensify the color

White paint: Dehydrate yogurt and sheep feta cheese 

On the crust: olive oil and Maldon salt.

All our grains are organic, stoneground and from Ontario.

 Note: Sourdough it is NOT gluten-free. However, as a result of using stoneground whole grains, the residual concentration of gluten in our 24-hour fermented sourdough, is smaller (20 parts per million) than in other crusts because the  sourdough feeds of gluten, during the break down process.
